Whether it is you or your family that you are trying to get more green leafy vegetable into your diet, here are three easy ways:
1. Smoothies
Smoothies are fast and easy way to get veggies. Just add a heaping handful of spinach or swiss chard to your favorite smoothie
½ cup milk or nut milk
1 banana
2 tbsp of peanut butter or nut butter
Handful or spinach or swiss chard
Ice
Mix all ingredients in the blender, blend & enjoy!
2. Popsicles
Make your smoothies into popsicles. Super easy, fast way to prepare ahead of time for a grab and go breakfast or snack!
Popsicle:
1 cup milk or nut milk
¼ cup plain or vanilla yogurt
½ cup orange juice
1 cup blueberries
1 cup packed spinach
Blend, pour into popsicle molds, freeze & eat!
3. Sauces
Puree a some leafy greens and add to your favorite pasta sauce. This is a quick extra step with bonus added veggies! I like to take about a cup of spinach, blend with a little water (make a paste like consistency) and add it to marinara sauce. Note: add it slowly so you don’t change the flavor or color of the sauce.
